Vito’s Clean Stuffed Peppers

By  Cara Trentadue – Vito is my inspiration in all aspects of life.  He is my Son.  I am so proud of his recent decision to eat clean and address his issues with insulin resistance and his weight.  Vito has lost a total of 28 lbs in the past 3 weeks and he is still going strong.  He follows my meal plans now and does cardio every day.  Like his Mama, he loves food and anything food related.  We have spent many nights watching the cooking channel and playing around in the kitchen.  Now that he is 16 and getting older, we don’t always have time to do the things we used to but every now and then we kick ass in the kitchen together.  He just joined the weightlifting team in school so maybe he’ll be cooking more often.

This recipe is slightly spicy so if you like less heat you can just omit the ingredients with the star, here is what you need:

 

1lb ground beef ( grass fed )

 

1 egg

 

½ cup grated locatelli romano cheese

 

4oz shredded cheddar

 

Red pepper flakes*

 

Chopped onion and green pepper (diced)

 

Hot sauce *

 

Hungarian Hot Paprika*

 

Parsely

 

1 cup quinoa cooked

 

5 large green peppers emptied of seeds

Sautee onion and chopped green pepper, add meat with all ingredients cook through.  Add cooked quinoa to the chopped meat mixture and stuff peppers.  Bake at 350 degrees for one hour or until peppers are tender.  Allow to rest and serve.

 

I am so proud of my Son.  Even though teenagers can be challenging I can see my investment paying me back already.  I love you Vito.
